MKN is a family-owned German manufacturer based in Wolfenbüttel, Lower Saxony, producing thermal cooking equipment for professional kitchens on land and at sea. The company manufactures on an 80,000 m² site and is certified to ISO 9001 and ISO 14001.
MKN supplies electric appliances in two marine grades. Marine basic adds a special voltage, a stable flanged foot that makes the appliance slip- and tilt-resistant, insert racks that secure trays and GN containers in a seaway, and a door that stays in position in rough weather. Marine plus adds the hygiene standard required under the Vessel Sanitation Program — seals, drain filter and drip tray — with a welded housing and a one-piece seamless worktop.
Equipment supplied to marine galleys must satisfy VSP hygiene rules and SOLAS safety regulations. MKN addresses both with flanged feet, door stops, secured pull-out rails and cooker guards. IPX6 protection against powerful water jets is not range-wide: 63 of the 511 MKN units we list state it, and they are the boiling kettles and griddle plates rather than the OPTIMA cooking blocks. The rating is worth confirming per unit before a wash-down regime goes into the cleaning schedule.
FlexiChef is the multifunctional appliance: boiling, braising, shallow frying, deep frying and pressure cooking in one pan, with the SpaceClean automatic cleaning system. FlexiCombi and SpaceCombi are the combi steamers, the latter built for restricted galley footprints. OPTIMA is the modular line, available in 700 mm and 850 mm depths, from which complete cooking suites are built. CounterSL covers countertop units, HotLine the free-standing range. MarineMeister is MKN’s purpose-built marine cooking suite, handcrafted with a one-piece seamless worktop, welded functional appliances and an individual yacht design.
MKN deep fat fryers can be specified with Fry Safe, a safety package developed for the risk that hot oil presents in a moving galley: an electronic safety temperature limiter, self-monitoring fail-safe system, minimum oil level monitoring and TÜV-certified protection.
MKN equipment is in service with Disney Cruise Line, AIDA, Carnival, Celebrity Cruises, Holland America Line, Hurtigruten, MSC, NCL, Oceania Cruises, Silversea, Seabourn, Star Clippers and The Ritz-Carlton Yacht Collection, among others.
What actually changes when a commercial appliance is built for a ship — supply, fixing, water protection, materials, hygiene construction, refrigerant and certification — and why shore equipment fails at sea.
