It does not turn the oven into a pressure-wash target, but it does give the designer confidence that incidental splashing from nearby sinks or kettles has been accounted for in the construction.
This configuration is the right choice where the requirement is up to 150 plated or cafeteria-style meals per day from a single combi, in a galley that cannot justify the space and power for a larger 10- or 20-level body. It is the wrong choice for a main galley that has to handle several hundred covers per service from one oven line; in that case, larger models in the same FlexiCombi series should be considered to avoid overloading this 6-level unit.
