RATIONAL Combi Steamer iCombi Classic 10-1/1 Overview

The iCombi Classic 10-1/1 carries ten 1/1 GN levels for 80 to 150 meals a day. It is a practical main oven for a crew galley where the cooks want direct control of the cooking climate and a simple, robust operating panel.

On board

Steam from 30 °C to 130 °C covers gentle steaming of fish as well as fast cooking of vegetables, convection up to 300 °C handles roasting and baking, and the combination of both gives moist roasting of meat and poultry. With the core temperature sensor and Delta-T cooking, joints are cooked to a set core temperature with low cooking losses.

Choosing the size

Next size up, the iCombi Classic 20-1/1, adds 10 levels and raises the top of the meal range from 150 to 300, but needs 37.2 kW instead of 18.9 kW, a 3 × 63 A fuse instead of 3 × 32 A, and weighs 231 kg against 133 kg. Stepping down to the iCombi Classic 6-1/1 saves 8.1 kW of connected load and 40 kg, at the cost of 4 levels. The iCombi Pro 10-1/1 has the same capacity and connected load at 130 kg, against 133 kg for this unit; it adds iDensityControl, the iCookingSuite and the iProductionManager on a touchscreen.

Marine version

The marine build of the iCombi Classic 10-1/1 carries DNV GL approval and meets USPHS hygiene requirements, according to RATIONAL, and is offered with electric heating only. On a table-top unit that means a door-stay that holds the door open in heavy seas, a ship's hinging rack whose raised rails keep containers in, a metal electrical connection, and a marine stand that is welded to the deck with the oven screwed on top. Where trolleys pass close by, a metal grid for the door glass, lateral impact protection or the HeavyDuty version with front protection and a USB core probe can be added.
