RATIONAL Combi Steamer iCombi Classic 10-2/1 Overview

The iCombi Classic 10-2/1 is the largest table-top Classic: ten 2/1 GN levels, rated for 150 to 300 meals a day. It suits the production side of a large crew galley where cooks work to their own settings and programmes.

On board

Out of the box, data exchange is by USB: HACCP records are stored on the unit and exported by stick, and an Ethernet or WLAN interface can be added as an option. RATIONAL also lists a lockable control panel, control panel protection and a safety door lock for the Classic range, options worth considering in a galley that is shared by several watches.

Choosing the size

Next size up, the iCombi Classic 20-2/1, adds 10 levels and raises the top of the meal range from 300 to 500, but needs 67.9 kW instead of 37.4 kW, a 3 × 100 A fuse instead of 3 × 63 A, and weighs 304 kg against 160 kg. Stepping down to the iCombi Classic 6-2/1 saves 15.0 kW of connected load and 29 kg, at the cost of 4 levels. The iCombi Pro 10-2/1 has the same capacity and connected load at 173 kg, against 160 kg for this unit; it adds iDensityControl, the iCookingSuite and the iProductionManager on a touchscreen.

Connections

RATIONAL publishes 37.4 kW connected load for the iCombi Classic 10-2/1 on 3 NAC 400 V 50/60 Hz, fused at 3 × 63 A, with 36.0 kW hot-air and 36.0 kW steam output; other voltages can be ordered. Water enters through R 3/4" at 1.0 to 6.0 bar and leaves through DN 50. It is 1,072 mm wide, 1,042 mm deep and 1,014 mm high, and weighs 160 kg.

Marine version

For use at sea RATIONAL supplies the iCombi Classic 10-2/1 as an electric MarineLine unit, approved by DNV GL (formerly Germanischer Lloyd) and built to USPHS hygiene requirements. Mounted on a marine stand welded to the deck, it adds a metal connection for the electrical supply, an adjustable door-stay and a hinging rack for ships with an upstand that stops containers sliding. Optional extras are a metal grid over the door glass, lateral impact protection and a HeavyDuty version with front protection and a USB core probe.
