RATIONAL Combi Steamer iCombi Classic 20-2/1 Overview

The iCombi Classic 20-2/1 is the largest Classic: twenty 2/1 GN levels on a mobile oven rack, rated for 300 to 500 meals a day. It is sized for the central production galley of a passenger vessel or accommodation platform.

On board

Because the steam generator is cleaned and descaled automatically, RATIONAL states that the unit can be operated without a water softener and without manual descaling, a practical point where fresh water is made on board. The cabinet interior is seamless stainless steel with rounded corners, and glass and stainless steel surfaces with IPX5 protection against water jets make the outside safe to clean.

Choosing the size

Stepping down to the iCombi Classic 10-2/1 saves 30.5 kW of connected load and 144 kg, at the cost of 10 levels. The iCombi Pro 20-2/1 has the same capacity and connected load at 325 kg, against 304 kg for this unit; it adds iDensityControl, the iCookingSuite and the iProductionManager on a touchscreen.

Here that means stainless steel feet that are welded to the deck or fixed against slipping and tilting, a mobile oven rack for ships with a bracket that stops trays sliding out, and an adjustable door-stay for heavy weather. Where trolleys pass close by, a metal grid for the door glass, lateral impact protection or the HeavyDuty version with front protection and a USB core probe can be added.
