RATIONAL Combi Steamer iCombi Classic 6-2/1 Overview

The iCombi Classic 6-2/1 takes 2/1 GN containers on six levels and is rated for 60 to 160 meals a day. It is a manually operated table-top oven for galleys that bake and roast on full-size trays but need to keep the unit low enough to work under an existing hood.

On board

The cooking chamber is seamless DIN 1.4301 stainless steel with rounded corners, the door has a ventilated double pane with a swivelling inner glass for cleaning, and the hand shower with automatic return rinses trays and the cabinet. Four cleaning programmes can run unsupervised, including overnight, and descale the steam generator at the same time.

Choosing the size

Next size up, the iCombi Classic 10-2/1, adds 4 levels and raises the top of the meal range from 160 to 300, but needs 37.4 kW instead of 22.4 kW, a 3 × 63 A fuse instead of 3 × 35 A, and weighs 160 kg against 131 kg. The iCombi Pro 6-2/1 has the same capacity and connected load at 135 kg, against 131 kg for this unit; it adds iDensityControl, the iCookingSuite and the iProductionManager on a touchscreen.

Connections

On 3 NAC 400 V 50/60 Hz the iCombi Classic 6-2/1 draws a published 22.4 kW through a 3 × 35 A fuse, split between 21.6 kW of hot-air and 18.0 kW of steam output, and RATIONAL builds other voltages on request. The water inlet is R 3/4" at 1.0 to 6.0 bar; the drain is DN 50. Footprint: 1,072 mm wide by 1,042 mm deep; height 754 mm; weight 131 kg.

Marine version

RATIONAL states that its MarineLine is DNV GL approved and follows USPHS hygiene requirements; like every MarineLine unit, the marine iCombi Classic 6-2/1 is electric only. Its marine kit is an adjustable door-stay, a hinging rack for ships with an upstand on the rails and a metal electrical connection; on board the unit is screwed to a marine stand that is welded to the deck. Door-glass grid and lateral impact protection are separate options, as is the HeavyDuty build with front protection and a USB core probe.
