RATIONAL Combi Steamer iCombi Pro 10-1/1 Overview

The iCombi Pro 10-1/1 puts ten 1/1 GN levels, rated for 80 to 150 meals a day, on the same 850 mm by 775 mm footprint as the 6-1/1; only the height changes. That makes it a natural main oven for a crew galley on a cargo, tanker or offshore vessel, and a second production oven in a larger galley.

On board

Ten levels give room for a full breakfast service, egg dishes, bacon and pastries, each on its own level, with the iProductionManager showing which tray goes in and which comes out next. Between services an intermediate cleaning takes 12 minutes according to RATIONAL, so the oven is back in production quickly, and the full cleaning programmes can be left to run overnight.

Choosing the size

Next size up, the iCombi Pro 20-1/1, adds 10 levels and raises the top of the meal range from 150 to 300, but needs 37.2 kW instead of 18.9 kW, a 3 × 63 A fuse instead of 3 × 32 A, and weighs 254 kg against 130 kg. Stepping down to the iCombi Pro 6-1/1 saves 8.1 kW of connected load and 29 kg, at the cost of 4 levels. The iCombi Classic 10-1/1 has the same capacity and connected load at 133 kg, against 130 kg for this unit; choose it if the cooks prefer to set time, temperature and humidity by hand rather than work with intelligent cooking paths.

Connections

On 3 NAC 400 V 50/60 Hz the iCombi Pro 10-1/1 draws a published 18.9 kW through a 3 × 32 A fuse, split between 18.0 kW of hot-air and 18.0 kW of steam output, and RATIONAL builds other voltages on request. The water inlet is R 3/4" at 1.0 to 6.0 bar; the drain is DN 50. Footprint: 850 mm wide by 775 mm (842 mm with the door handle) deep; height 1,014 mm (1,064 mm with the ventilation pipe); weight 130 kg.

Marine version

RATIONAL states that its MarineLine is DNV GL approved and follows USPHS hygiene requirements; like every MarineLine unit, the marine iCombi Pro 10-1/1 is electric only. Its marine kit is an adjustable door-stay, a hinging rack for ships with an upstand on the rails and a metal electrical connection; on board the unit is screwed to a marine stand that is welded to the deck. Door-glass grid and lateral impact protection are separate options, as is the HeavyDuty build with front protection and a USB core probe.
