RATIONAL Combi Steamer iCombi Pro 10-2/1 Overview

The iCombi Pro 10-2/1 is the largest table-top model: ten 2/1 GN levels, rated for 150 to 300 meals a day. It is sized for a crew galley on a large merchant or offshore vessel, or for the production side of a passenger ship galley that works with full-size 2/1 GN roasting and baking trays.

On board

For a chief cook who wants every sitting to come out the same, the unit stores up to 1,200 programmes of up to 12 steps. HACCP data are recorded on the unit and exported by USB or managed in ConnectedCooking, which gives a record of cooking temperatures for sanitation inspections. A cool-down function with additional water injection brings the cabinet temperature down quickly when roasting is followed by steaming.

Choosing the size

Next size up, the iCombi Pro 20-2/1, adds 10 levels and raises the top of the meal range from 300 to 500, but needs 67.9 kW instead of 37.4 kW, a 3 × 100 A fuse instead of 3 × 63 A, and weighs 325 kg against 173 kg. Stepping down to the iCombi Pro 6-2/1 saves 15.0 kW of connected load and 38 kg, at the cost of 4 levels. The iCombi Classic 10-2/1 has the same capacity and connected load at 160 kg, against 173 kg for this unit; choose it if the cooks prefer to set time, temperature and humidity by hand rather than work with intelligent cooking paths.

Marine version

The marine build of the iCombi Pro 10-2/1 carries DNV GL approval and meets USPHS hygiene requirements, according to RATIONAL, and is offered with electric heating only. On a table-top unit that means a door-stay that holds the door open in heavy seas, a ship's hinging rack whose raised rails keep containers in, a metal electrical connection, and a marine stand that is welded to the deck with the oven screwed on top. Where trolleys pass close by, a metal grid for the door glass, lateral impact protection or the HeavyDuty version with front protection and a USB core probe can be added.
