RATIONAL Combi Steamer iCombi Pro 6-2/1 Overview

The iCombi Pro 6-2/1 keeps the low six-level height of the 6-1/1 but takes 2/1 GN containers, so each level holds twice the tray area. RATIONAL rates it at 60 to 160 meals a day. It is the table-top choice when a galley works with large roasting trays or bakery sheets but has no height to spare above the counter.

On board

A 2/1 GN level takes a full-size tray or two 1/1 GN containers side by side, so the six levels can be worked as twelve 1/1 positions when the menu calls for smaller batches. Active dehumidification through iDensityControl keeps roasting and baking on large trays crisp rather than steamed, and the core temperature probe corrects itself automatically if it has been placed badly in the product.

Choosing the size

Next size up, the iCombi Pro 10-2/1, adds 4 levels and raises the top of the meal range from 160 to 300, but needs 37.4 kW instead of 22.4 kW, a 3 × 63 A fuse instead of 3 × 35 A, and weighs 173 kg against 135 kg. The iCombi Classic 6-2/1 has the same capacity and connected load at 131 kg, against 135 kg for this unit; choose it if the cooks prefer to set time, temperature and humidity by hand rather than work with intelligent cooking paths.

Connections

RATIONAL publishes 22.4 kW connected load for the iCombi Pro 6-2/1 on 3 NAC 400 V 50/60 Hz, fused at 3 × 35 A, with 21.6 kW hot-air and 18.0 kW steam output; other voltages can be ordered. Water enters through R 3/4" at 1.0 to 6.0 bar and leaves through DN 50. It is 1,072 mm wide, 975 mm (1,042 mm with the door handle) deep and 754 mm (804 mm with the ventilation pipe) high, and weighs 135 kg.

Marine version

For use at sea RATIONAL supplies the iCombi Pro 6-2/1 as an electric MarineLine unit, approved by DNV GL (formerly Germanischer Lloyd) and built to USPHS hygiene requirements. Mounted on a marine stand welded to the deck, it adds a metal connection for the electrical supply, an adjustable door-stay and a hinging rack for ships with an upstand that stops containers sliding. Optional extras are a metal grid over the door glass, lateral impact protection and a HeavyDuty version with front protection and a USB core probe.
